This coffee offers a light body that is great for refreshing throughout the day. It contains a perfect blend of peach, jasmine, honey, and bergamot flavors with a subtle acidity. Ethiopia - Kontema is best enjoyed through cafetiere / filter extraction or as an ideal accompaniment to a sophisticated lunch/dinner.
The Little Details
This coffee was grown by smallholder farmers living around the town of Bombe , Sidama region in Ethiopia. It's grown 2100 to 2300 metres above sea level and is washed thoroughly and dried on African beds. Its a drawn of JARC Selection 74110 and 74112 varietal beans.
About the Process
The journey begins with only the ripest cherries being selectively handpicked. Once collected, the cherries are delivered to the mill to be sorted based on density and quality. This process is carried out by submerging the cherries in tanks and removing the floating cherries prior to drying. After sorting, the cherries are then de-pulped and fermented in tanks of water for 48-72 hours. As soon as fermentation is complete, the coffee is washed and evenly dispersed on raised beds to dry in the open sun for roughly 12-15 days depending on temperature and humidity, rotation occurring every 30 minutes. After drying, the coffee is delivered to the dry mill to be hulled and prepared for export
