Our Seasonal Dark Roast espresso blend is bold, unapologetic, and deeply satisfying — a full-bodied dark roast with rich dark chocolate at its core, smooth caramel sweetness running underneath, and just enough acidity to keep every sip alive and interesting.

The body is full and weighty — substantial without being harsh, warming without being heavy. It coats the palate with a richness that lingers, and the finish is long, smooth, and deeply chocolatey.

Drinking it black? This is where the dark roast really earns its reputation. Pull it as an espresso and you'll get intense dark chocolate, a hint of caramel sweetness, and a bold, clean finish. As a long black or Americano, it opens up beautifully — the acidity brightens, and the depth becomes even more apparent. Best brewed as espresso, stovetop, or cafetière for black drinkers who want the full experience.

Drinking it with milk? Exceptional. The full body holds up beautifully under steamed milk — the dark chocolate note becomes almost velvety, the caramel sweetness deepens, and you're left with a flat white, latte or cappuccino that genuinely delivers. This is the blend that turns a good milk drink into a great one.

A rotating seasonal blend, crafted by Nick at our small-batch roastery just outside Canterbury. At this time of year — typically May through August — the cherries ripen quickly and evenly under the intense Brazilian sun, and the farmers time the harvest carefully to pick at peak ripeness for the best possible sugar development inside the cherry.

Once harvested, the cherries go through flotation tanks, where water separates the dense, ripe cherries from any floaters — underdeveloped or damaged fruit that would compromise the cup. Only the sinkers move forward. This is where the magic happens. As the cherry dries around the seed, the sugars and fruit flavours from the pulp slowly migrate into the bean itself, creating that characteristic natural sweetness, body, and complexity. The drying phase takes 3 to 5 weeks, and the cherries are turned regularly throughout the day to ensure even drying and prevent fermentation or mould.Once the cherries reach the ideal moisture content, they go to the dry mill for hulling — mechanically removing the dried outer layers to reveal the green bean inside — before final sorting, grading, and export. The blend is always 50/50, always medium dark, always smooth. The beans may evolve with the seasons, but the cup stays the same.

We don't list the specific beans in this blend — because they change. What doesn't change is how we choose them. Every time we make Half Caf, Nick selects the best decaf we have in the roastery and pairs it with whichever coffee brings out those same classic notes — the chocolate, the caramel, the warmth. We roast both separately to get the best from each, then blend them by hand at a precise 50/50 ratio. It's a blend built around flavour consistency, not a fixed recipe. Ethyl acetate occurs naturally in fruits, and this is why it is the best natural option for decaffeination. For this process, sugars from sugarcane are fermented to create ethyl alcohol. This is then mixed with acetic acid to create ethyl acetate.

The EA decaffeination process begins with a pretreatment steaming the coffee beans at a low pressure to remove the silver skin, or the thin layer of skin on the coffee beans. The coffee beans are then moistened with hot water to swell and soften, to catalyze the hydrolysis (the chemical breakdown of a substance due to reaction with water) of the caffeine. Essentially, the caffeine is bonded to chlorogenic acid inside the coffee, and this process breaks them apart to remove the caffeine. The beans are then moved through an extractor, where they are repeatedly washed with the natural solvent, ethyl acetate. This occurs several times in order to remove 97% of the caffeine content within the coffee.
Surprisingly, the weight of the coffee is reduced by 3%. The EA method gently extracts the caffeine from the coffee without using excessive heat that may damage the beans. Once this process is complete, a flow of low-pressure steam is passed over the beans to remove any remaining ethyl acetate, which will evaporate at 70°C once the coffee beans are roasted. Lastly, the coffee is vacuum-dried until the moisture content of the coffee is brought back to the original moisture level when it arrived at the EA processing facility – typically between 10-12%. Thus, completing the decaffeination process.

<span data-sheets-userformat='{"2":769,"3":{"1":0},"11":4,"12":0}' data-sheets-value='{"1":2,"2":"This is a lovely light roast coffee from Colombia that we would recommend for use in a cafetière or filter, maybe one for late morning / early afternoon.

Roasted medium dark, this single origin specialty coffee pours rich dark chocolate and smooth caramel, with a nutty depth and a little touch of lime at the end that keeps every sip fresh.

That lime comes from the mountains. Grown at 1,400 to 1,600 metres in the Yungas valleys of La Paz, the cherries ripen slowly in the cool air, building dense beans full of natural sugars and bright acidity. Typica brings sweetness and body, while Caturra and Catuai add a lively edge. The fully washed process removes the fruit before drying, so the cup stays clean and clear. Nick's medium dark roast then turns those sugars into caramel and chocolate and softens the acidity to just a hint of citrus. Each producer carries the harvest to their own small wet mill on the farm, where the cherries are tipped into tanks of water. Ripe cherries sink, while floaters and underripe fruit rise to the top and are removed.

The cherries are then depulped by machine and left to ferment in open tanks for up to 24 hours, which loosens the sticky layer of fruit, called mucilage, still clinging to the bean. Then comes the hard work: the coffee is pushed through channels of running water with wooden paddles, and the water is changed again and again until every bean is completely clean. That care is why a washed coffee tastes so clean and clear.

Many producers sell their coffee while it is still half-dried, at around 50% moisture, a stage known locally as "mote". Every Wednesday and Saturday, farmers from across Caranavi bring their coffee to town, often because their harvest is small, they can't dry it themselves, or they need early income for the season. The association collects it the same day, as there is only a 12 to 24 hour window, and the drying is finished on raised beds inside greenhouses over 5 to 10 days, depending on the weather. The lots are then blended, milled and graded for export.

So every bag brings together the work of many families, from their hillsides to market day, and now to your morning cup.
