The Flavour Profile
This medium dark roast coffee can be enjoyed through any extraction method. It boasts a medium to full body and flavors of dark chocolate, peanut, hazelnut, and a thick mouthfeel. It is an excellent pick-me-up after breakfast or lunch.
The Little Details
This coffee comes from Fazenda Passeio in Alfenas town, Minas Gerais region in Brazil. It's grown 1100 - 1200 meters above sea level and is natural processes. It's 100% Catucai varietal coffee beans.
About the Process
Passeio's coffee is harvested only when the cherries reach an advanced stage of ripeness, to avoid processing green beans. All the cherries are handpicked and then natural lots are immidiately dried in the sun on the farm's extensive patios with the cherry still attached, typically producing a fruiter, wilder cup. The coffee is then kept in wooden resting bins for a minimum of 60 days before the final dry milling and sorted immidiately prior to export.
This particular coffee is 100% Catuai, which is harvest and processed separately from other lots to maintain its own distinct characteristics.
