This a light medium roast coffee from Colombia Agua Linda. This coffee boasts a medium body with notes of sweet orange and toffee, making it the perfect choice for a filter or cafetiere brewing method.
The Little Details
This coffee comes from Agua Linda farm, Antioquia region in Colombia where the coffee beans goes through a Extended Fermentation process. It is 100% Colombia varietal coffee beans.
About the Process
Agua Linda's coffee is selectively hand harvest and then brought up to the highest part of the road using cable cars. The practice of Extended Fermentation came about because of the low temperatures in the region, requiring longer fermentation for the coffee to achieve the ideal amount of mucilage reduction.
After the cherries are delivered to the mill, they submerged in water to remove the floaters, or lower qualitycherries. Fermentation follows, to begin the breakdown of the fruit and development of sugars in the coffee, the cherries sit for one day. Next , the cherries are pulped to remove the external fruit, and the coffee is covered with water and left to ferment for 4- 5 days, or untill the ideal moisture content is reached. Once dried, the coffee is bagged and delivered to the dry mill in Medellin.
