Grown at 1,400 to 1,500 metres above sea level, this lot is 100% Red Bourbon, fully washed, and processed at the family's own El Borbollón mill — one of the region's most respected, having helped ten neighbouring farms place in Cup of Excellence competitions, four of them scoring above 90 points.\u003c\/span\u003e\u003c\/p\u003e\n\u003ch2\u003e\u003cspan\u003eAbout the Process\u003c\/span\u003e\u003c\/h2\u003e\n\u003cp dir=\"ltr\"\u003eFrom December through March, pickers trained to select only fully ripe cherries harvest by hand into traditional woven baskets — a slow, deliberate process that ensures nothing but the best fruit makes it to the mill. The trees themselves are grown under native shade, which conserves the soil and supports biodiversity, and are kept to a strict pruning schedule that improves both disease resistance and cup quality.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eAt the mill, cherries are pulped without water before fermenting for 16 to 20 hours, until peak fermentation is reached — the point at which the coffee's natural sweetness and clarity are fully developed. The parchment is then washed clean in fresh water to remove every trace of mucilage, leaving nothing but bean and moisture behind.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eDrying happens on the mill's expansive clay patios, chosen deliberately over concrete because clay absorbs and regulates heat far more evenly.
