Grown by the smallholder farmers of the Toroton Farmers' Cooperative Society in the Nandi Hills, this single origin coffee bursts with cranberry, blackberry and grapefruit, rounded off with a honeycomb sweetness that lingers long after the last sip. Toroton's SL28, SL34, Ruiru11 and Batian varietals are prized for bright, juicy acidity, and the fully washed process strips away the fruit before drying, leaving a clean, vivid cup where every note comes through with real clarity. This lot is a peaberry (PB) grade, grown above 1,800 metres above sea level from the SL28, SL34, Ruiru11 and Batian varietals, and fully washed to produce a clean, bright cup.\u003c\/p\u003e\n\u003ch2 class=\"font-claude-response-body break-words whitespace-normal\"\u003eAbout the Process\u003c\/h2\u003e\n\u003cp dir=\"ltr\"\u003eAt Toroton, farmers hand-pick only the ripest cherries and deliver them to the factory the same day, where they're carefully sorted before pulping. A disc pulper fitted with three sets of discs removes the outer skin while protecting the delicate parchment layer underneath — the first step in preserving everything that makes this coffee special.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eOnce pulped, the coffee ferments for 16 to 24 hours, giving naturally occurring enzymes time to break down the remaining sugars and mucilage. This is a critical stage — get it right and you unlock clarity and sweetness; rush it and you lose both. The parchment is then thoroughly washed and soaked before moving to drying.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eFrom there, the coffee is spread across raised drying tables and turned regularly by hand, drying slowly over 7 to 15 days depending on the weather.
