The Little Details
This coffee comes from Manemo Farm AB, town of Mbozi , Songwe region in Tanzania. It's grown 1562 metres above sea level and is washed thoroughly and sun dried on raised beds. Its a drawn of Compact and N39 varietal beans.
About the Process
Manemo has his own processing facilities, where he brings his cherries after the harvest to be sorted. He then pulps his coffee utilising a hand machine to remove the external fruit. The coffee is then left to ferment in a cement tank to initiate the breakdown of the remaining mucilage. the coffee is dried in the open sun on raised beds until the ideal moisture content is reached. Manemo then deliveries his coffee to Coffee Management Services (CMS) dry mill in Songwe. CMS assist coffee producers with dry milling, sorting and exporting.
