The Little Details

This coffee comes from Finca (farm) San Jose in San Salvador Volcano region in El Salvador. It's grown 1350 metres above sea level. This beans Anaerobic Washed. It's 100% Red Bourbon beans.

About the Process

This lot is comprised of the Red Bourbon varietal. After the careful handpicking during the harvest, the cherries are delivered to the Santuario- Borgonovo mill for processing. The cherries are soaked in water for 4 hours, cleaned, sorted and hydrated. Next, the cherries are de-pulped, leaving 50% of the sticky mucilage on the outside of the bean. The coffee is then placed in sealed tanks with Mossto to initiate an anaerobic fermentation. Mossto is the filtered juice obtained from the coffee cherries after pulping, full of sugars and a great enzyme to use during fermentation. The coffee ferments with the Mossto for 14 hours. Afterwards, the coffee is dispersed on raised beds, covered with shade, to dry for 22 days. Stabilization then occurs when the coffee is moved to rest under Fique Bags, to dry for 8 more days. Lastly, the coffee is bagged in Grain Pro bags to rest for 16 days before being cupped and prepared for export.
