PERU Cedro - ORGANIC! is a medium roast coffee with well balanced flavour notes of chocolate, raisins, cherry, honey, and papaya with a subtle touch of citrus. Perfect for any time of day. This is a medium to full-bodied coffee and ideal for all types of extractions.
The Little Details
This coffee comes from El Cedro farm in La Coipa, Cajamarca, Peru. It's grown 1800 - 1850 meters above sea level and are fully washed by the people of Peru. It's drawn from Caturra and Bourbon varietal coffee beans.
About the Process
The process begins with the cherries being selectively handpicked, before being floated in cool clean water to remove any low-density cherries. The cherries are then fermented in tanks for 48 hours before being de-pulped to remove the external fruit. Once more, the coffee is placed in a tank to ferment for 72 – 96 hours in order to breakdown the remaining mucilage. Afterwards, the coffee is washed three times and then dispersed on raised beds to dry in the open sun for 15 – 20 days. When the ideal moisture content is reached, the coffee is bagged and delivered to the dry mill in Jaen to be hulled and prepared for export.
